The blue agave hearts are slow cooked in masonry ovens, extracting their natural sugars. After fermentation, the tequila is double distilled in copper stills before spending a significant amount of time maturing in American whiskey casks. This aging process imbues the tequila with a rich amber colour and a depth of flavour unattainable in younger tequilas.
