Paul Wallace Reflection Chardonnay Tasting Set sweet vanilla and cocoa withGrapes for the Paul Wallace Reflection Chardonnay 2024 were harvested on 18 February 2024 from a Chardonnay vineyard (Clone CY95) planted on Bokkeveld shale soils. Hand picked into lug boxes before vinification takes place, grapes were whole bunch pressed and the juice taken to Burgundian oak barrels where it underwent fermentation. There is a 33% new oak contribution and a mixture of 500 litre and 300 litre barrels were used for maturation.
